Makes about 2 cups
2 cups (14 ounces) granulated sugar
1 cup water
Simple syrup is a combination of sugar and water, boiled for just a few minutes until if forms a syrup. I keep this in my refrigerator for making lemonades, mixing cocktails (and for rimming the glass with salt for margaritas, and making sorbets.
In a small saucepan, combine the sugar and water and place over high heat, stirring occasionally. When the water begins to show small bubbles, lower the heat to medium-low and simmer for 5 minutes. At this point the sugar should be dissolved. Pour into a storage container, let cool to room temperature, and then cover and refrigerate. The syrup keeps almost indefinitely.
