1-2 zucchini, sliced
1-2 yellow squash, sliced
1 red bell pepper, diced
1 red onion, coarsely chopped
Fresh herbs (tarragon, thyme, basil) chopped
Mix the squashes, pepper and onion in a bowl. Portion the mixture on rectangles of greased foil. Sprinkle with the herbs. Dot with butter.
Seal the top and one side of the packet. Add two or three tablespoons water through the open side, and seal it.
Cook over hot coals, three to four minutes per side.
