Hey guys, I'm a 21 year old cook that just moved to LA for cooking/music.  I start my first night at the Saddle Ranch on sunset and it's St. Patty's day. (yikes!)  I'm more trained in high-volume prep but I have been doin line cooking the last two years.  Any pointers?

Welcome to SoCal, Frosty.  

Pointers:  It's a steak house.  Nothing complicated.  You'll be fine.  Keep your head down, your knife sharp and your board clean.

St Patrick's Day at the Saddle Ranch. Wow. Way to start a new job! I suppose it's going to be crazy in there. I don't have much advice... other than... stay away from that horse!
