I own and run a small snack bar / creperie with my Fiance. This year we have a new Carte D'or ice cream freezer with 9 flavours of scoop ice cream on show for customers to choose and I thought warm brownies might sell well with a nice ball of ice cream on top.

I need a simple recipe made with cocoa powder, not chocolate because here chocolate is very expensive. We are an economical establishment keeping our costs low and passing on the savings to the customer in the form of a low price menu.

Also, how do you know when brownies are cooked? Any tips like leave in the tin until cool / bake on top shelf of oven etc?

Can they be frozen and heated in the microwave when ordered? How long does it keep in the fridge?
