anyone ever make a cake using avocado?

I like the texture of avocado, and thought it would make a very interesting textural addition to cakes, maybe it would give baked goods that creamy density that avocado has.  I know i can look up on google, but I don't want a bunch of recipes, but I want to know if anyone has ever actually made one of them.  (I also looked up on the "search" function of the site, but found a lot of completely irrelevant threads and one post that seemed to be an advertisement for a specific brand of sugar.  (This is also why i don't just look on google).

I never could stand zucchini bread - it either tasted of vegetables or tasted of too much cinnamon, way too one-dimensional - though i do love carrot cake, because carrots have a mild slightly sweet flavor and they add moistness without imposing a too-strong flavor that would require covering up.  I thought avocado might be similar (yeah, of course, way more expensive).   It might also be useful for those who need to avoid animal fats, i would guess, but that's not my problem.  I just like its creamy texture and thought it might be used in something.

I don't have enough time to experiment any more, but maybe someone has a recipe they've tried?

Thanks

Thanks Latika,
I'll try it.  What kind of texture does it have?

I haven't made an avocado cake, but in one class I was in, we made an avocado sorbet! That was surprisingly incredibly tasty.

This looks good. I like eating avocado itself so this will really be interesting if I try to bake it.

@siduri, are you going to try to bake it?

I will, not sure when though, since i am swamped at the moment with work.  Anyone who tries it, i would be interested in the result.

Never made a cake with it, but I tried a type of pudding. I  threw it out and chalked it up to a failed experiment. Color wise it turned extremely dark(we thought it would) shades of brown and purple and had no taste at all.

Thanks for the recipe Latika Sharma...Anyways, here's my recipe for an Avocado Cheese Cake. Hope you will like this one also.

Avocado Cheese Cake

Ingredients

    * 2 avocados - peeled, pitted and pureed
    * 2 eggs, beaten
    * 1 (8 ounce) container lemon flavored yogurt
    * 1 (8 ounce) package shredded Mexican-style cheese
    * 1 cup self-rising corn meal mix
    * 1 tablespoon white sugar
    * 1 teaspoon ground cinnamon

Directions

   1. Preheat oven to 425 degrees F (220 degrees C).
   2. In a large bowl, mix together the avocado, egg and lemon flavored yogurt until smooth and well blended. Stir in the shredded cheese and cornmeal mix. Combine the sugar and cinnamon, and stir into the avocado mixture. Spread evenly into a 9x13 inch baking dish.
   3. Bake for 15 to 17 minutes in the preheated oven, or until the top starts to turn golden brown, and a toothpick inserted into the center comes out clean. Cool on a wire rack for at least 30 minutes before serving.
