What is it?

Several months ago, i downloaded an Italian recipe from a website that i cannot remember. I made it and it was absolutely awesome. The problem is, I've deleted the file, lost the sheet i printed it on and there was no title on the recipe.

I remember some of the ingredients and basically how it was made, however, i would like to make it for valentines day, and i need the recipe. It was a beef dish that called for Romano and Parmesan cheese, I can't remember the name of the pasta used, but it was similar to Lasagne, only larger. It said to cook the pasta until just short of being done, then rinse with cold water to cool. then the mixture of meat cheeses and spice was spread on the inside of the pasta and rolled it was then placed on a baking sheet, covered in spaghetti sauce and baked for approx 25 mins.

can anyone help me find this recipe? I'm celebrating Valentines Day tomorrow due to the fact that I'm deploying on Valentines Day. Any help with either name or recipe is greatly appreciated. Thanks in advance.

Sounds sort of like an Americanized version of Canneloni. Does that help?

Yes, it does help greatly. Do you by chance have a recipe. Preferably containing beef, and Ricotta cheese?

I can't give you an Americanized version of Cannelloni...but, out of the many Cannelloni recipes I have, this is the one that looks more like the one you described:


Ingredients (serve 4)

For the Pasta:
-1 package of Lasagne, or
-fresh lasagne made with 11 oz wheat flour, 2 large eggs, water and a pinch of salt

For the sauce:
-Bolognese sauce (see, in this board, the recent thread on this topic!:bounce: ) or
-Plain meat sauce, made with 11 oz minced beef meat, 1 lb tomato puree (or more, according to your taste), 1 onion, oil, salt and pepper

For the filling:
-6 oz Mozzarella, chopped
-6 oz Provola, chopped (maybe this is Romano cheese?)
-6 oz Ham, minced
-11 oz Ricotta
-2 large eggs

1) If you don't use Bolognese sauce, make meat sauce:
Gently fry the chopped onion in 3-4 oz olive oil and 3-4 oz butter until soft, then add the meat, brown it for 10 mins, add the tomato sauce, season with salt and pepper and cook on a low heat for about 45 mins, adding stock or water if required.

2)Half cook the lasagne in boiling salted water (add some oil to prevent them sticking), few at a time. Drain on a linen. Cut them in squares 4-5 inch large.

3)Make the filling with the ricotta, cheese, ham, eggs, 1 cup meat sauce, salt and pepper to taste. Mix until smooth.

4)Fill the pasta squares with the filling and roll them up.

5)Spread some sauce into the baking dish. Fill it with the Cannelloni. Pour on the remaining sauce. Sprinkle with 4 oz grated Parmesan cheese.

6)Bake at 350° for 40 mins.

As you can see, there are almost no spices (spicing a lot is much more an American than an Italian habit) but of course you can add your favourite spices if you like!:)
