Need Quick Help For Frying Chicken

I've done a search on technique and best oils but I have already had a glass of two or wine and realized we have no peanut oil...so no driving.

I already have my chicken prepped and ready to go...

would you use vegetable oil, light OO, or Crisco?

Also I am using a cast iron skillet on a gas stove...what temp (on a 1-8 dial) would be best for the oil you choose.

Thanks in advance:)

I would use vegetable oil or Crisco.  I use a gas stove and have my temp between 6-8 on the dial.  I judge by how the chicken sounds and looks when cooking.  Hard to explain but it comes with experience.

HTH!

No that's great:) I've never fried chicken on this stove so I like a good measure.

Thanks!
