Fresh beets -- how do you deal with them?

I love fresh-cooked beets but they are sure messy.

I cook them whole unpeeled, when done, wear rubber gloves to cut off root-ends and slip off peels (to avoid staining hands). This is a messy job close to serving time.How do you deal with fresh beets?

I trim much of the skinny part of the root, cut back the tops to within an inch of the beetroot, wrap individually in foil, and roast in the oven. Peel when cool enough to work with. 

Among other things, this makes them a little (key word "little") less messy to handle.

I like to roast them whole in the oven, but without the foil, which makes them steam more than roast in my experience (although there's nothing wrong with steamed beets). That's when I have time - my oven takes a looong time to pre-heat.

If I'm in a hurry, I simply boil them whole.

Then dice, and add a little lemon-juice, olive oil, salt and pepper, that's it.

OK, I do the same. But after boiling, do you peel, French Fries? And if so, how you avoid the messy beet juice all over?

I like beets roasted, too but boiled has a different, more gentle flavor that goes with some dishes better than the robust roasted beets.

Beets can indeed be messy.  I like red eggs - hard boiled eggs pickled with beets and onion.

I also like beet greens sauted with diced bacon.  They can be a bit bitter but oddly enough some lemon juice can sweeten them up.

oh man i love beets. in borsht or just boiling and eating them, especialy if they are the red aand sweet. i like to put them in salads too. i usually boil at home but have roasted them and my intership has beets golden ones though. they roast them.beets are good for you too

I love keeping the skinny root end of the beet, makes for a very dramatic presentation.  You can skin them with a kitchen towel too.

Now, these are both a great suggestions! Skinning with paper towel may also work, saving a messy laundry. I'll try this next time beet is in my kitchen. Thanks.

man i looooove beetroot! i love it pickled.. on burgers, sandwiches, straight from the can, cubed in salad with fetta... yummmm!!

i just accept the juice as part of the beety experience, not too worried about the purple stains!
