to be honest I usually take a quiche recipe and an extra egg then don't add a crust.

 

also since it's just baked eggs I make it up as I go...well a bit anyway...

 

5-6 eggs

1 cup milk

1/4-1/2 cup cheese (your choice)

 

then It's go crazy time, the dish is really about leftovers and sauteed vege or meat. That way when the eggs are done it's done and no partially cooked vege or meat inside to cause issues.

 

so add whatever you wish:

bacon,ham, turkey, chicken, bacon,  or bacon

and/or some

spinach, red onions, bell peppers, broccoli, kale, chiles, corn

or

bacon
