Does anyone have exprience with Aripas

Does anyone have experience with Aripas. As best recipe, shelf life, do they need to made fresh , encountering any problems etc.

I have eaten Arepas in Guatemala and other parts of Central America. They are made with corn flour if I am not mistaken. When I had them the were filled a meat filling.

The bread was rolled flat by hand by the woman and the men would roast them on a metal surface , like little thick pancakes 4' inches diameter.

Are these the arepas you are speaking about ?

Chef Tomain, I do not see where you are from ? Are you wanting to make these from scratch and need  the recipe or are you looking for toppings and fillings ?

Basic Arepas are almost the same as polenta. Usually they are served with sliced  Jack or Mozzerella cheese on top. Some people split them and put in a filling then grill.  Sometimes topped with spicy salsa .They are served at a lot of street fairs in Florida along with Jamaica meat patties. They sell here from stand for $3.00  they cost about >.25 to make.

I was wondering if they needed to be made fresh or can they be reheated a day after being made and ease of prep.

from what I know of corn meal/flour , make it fresh daily....the flavor kinda goes off. Not saying it will kill you or even make you sick,  it just doesn't taste right.

There is a Mexican food co. In Miami that sells them flash  frozen to almost all the places down here. They are made in advance and they are pretty good.. Really there is not to much in them that can go bad if wrapped and refriged correctly.
