I have wanted to be a chef my whole life, and now that I'm older I'm trying to give myself the best experience and history I can so I have a good chance at shooting for my dream. I have been trying to teach myself techniques from books, but experience and being taught will always triumph over reading about something. My older brother was a sous chef, so I have been trying to learn from him, and on top of all this I have recently found a head chef that has 30+ years in the culinary business. I have set it up so that I could be his apprentice and learn by working alongside him. I have also set up plans for culinary school later down the road, so I'm wondering if anyone has any tips on how I can become better with anything, I am open to any tips, recipes, or criticisms, it would all be appreciated.  :)
