I like soup.  It has been about 100 degrees under blazing summer skies here in Utah, so hot soup has not been at the top of my list lately.  Maybe some sort of chilled watermelon raspberry soup...

I like onion soup, both the traditional french style and the sweet onion I make.  I like the simple hot broth, mushroom, soy sauce and green onion soups I whip up in about 5 minutes.  I like to make stocks that take many hours to develop..

Soup is good food.

And don't forget the incredible range of cold soups, ideal this time of year.

Even if you can't call congee (aka juk aka rice porridge) soup, so what?  I like it heaps, but Linda is an absolute fanatic.

So Shroom... what are some of your favorite congee "fillings?"

Linda mostly gets chicken and black mushroom, but her favorite (from one restaurant and from me) is pork bones and dried bokchoy with a little XO on top.  My tastes are more adventurous.  We have a congee specialty place in Rowland that does a great frog -- actually printed as "flog" on the menu.

I love all kinds of asian soups especially noodle soups.  Pho, tom ga gai, yentafo, that Cambodian one with fish and beans and chili, kidney and fish with noodles, handmade noodles and potherb, ramen of all sorts... Too many too name.  Too many favorites.

I have a seafood bisque recipe that I am rather fond of.  In fact, despite the heat, I'm doing it this weekend for some friends that are in town visiting.

Al Yeganeh.  He is the real life guy that the Seinfeld soup episode was based on.  He ran the International Soup Kitchen in Manhattan for many years.  People did indeed line up around the block for his soup, and he did indeed have those strict ordering rules.  He got very upset about being referred to as the Soup Nazi.  I think he is now in Europe marketing his soups for home use.

For me it's crawfish bisque, such as that served in the Pappas chain of restaurants (mostly in Texas - DFW and Houston,) but,, luckily, one in the next town here - "Pappadeaux" a  Cajun-themed one.  I've eaten in many of their restaurants of many of the themes they operate, and their quality control across the whole range is just awsome. (By the way, I believe the well-regarded Pappas Restaurant in Tarpon Springs is a different bunch of Greeks, or at least another branch of the family to the Texas ones.)  If you find yourself near any one of these places, it's well worth a visit.  They also make the best onion rings in the known universe.

Then it's a very dark French onion soup topped (not just the soup - the whole bowl) with a thick blanket of nicely-browned Swiss cheese.

Getting hungry...

Tomato Florentine......

Good bread, good butter.

Cheese

escarole soup with rice

meat, of any kind, cooked at a high temperature so it's crusty outside, juicy inside.

A piece of roast (chicken, pork, beef) cut off the leftover roast while it's in the fridge, cut off the roast with the refrigerator door still open, knife in one hand, salt shaker in the other.  True luxury - to have leftover roast meat, to be able to eat it at any hour, without worrying that I really should save it for tonight's supper, to be able to eat it at 11 in the morning

Cake.
