seeing as i made myself so popular with my last thread for the girls, thought i'd send this out as a general question...what would you do differently if you had to do your career all over again?...hindsight being everything, what would you change if you could? any career regrets?...would you still choose food? a different locale? venue? teaching? more fun? more serious? me?... i would have liked to have gone to italy to live,study and enjoy the dolce vida!...also, just for sh*** and grins, what is the worst cooking mistake you have ever made?...i don't mean burning the soup and having to start all over again, i mean like accidentally flambeing someone...good day chefs

This is a second career for me.. first one was a special needs worker long long ago.. I effectively killed that one when I left the working world to be a stay home mom to my kids.  If I had to do it all again I'd not change a thing.  Sure the prospect of travelling with this business is there but the younger me would not have lasted five minutes in a kitchen. 

 

Worst cooking mistake vs most embarrasing I say.. I'm on the most embarrassing side here.  When we were first married we lived in a triplex walk up and we were on the top floor.  I had corningware dishes that were good on the stovetop and I mistakenly thought pyrex would work on the stove too.  I was making chicken cacciatore for friends who were coming to dinner... well the dish broke under the heat and I had some flames to put out.  My apartment filled with smoke so I opened the door and the window in the stairwell but the smoke still reached the basement apartment and they called the fire department.  In the meantime I threw together a spaghetti sauce and caesar salad for our soon to be arriving friends.  I was totally and completely embarrassed when the TFD turned up to put the fire out and then lectured me on safe cooking practices.  I've had the fire department called on me since then... we back onto a private alleyway and it can be seen by the houses around the corner.  One of those houses is a rental and the kids were small so I was bbqing in the alley using my charcoal grill.. I have no idea what they were hopped up on but when they saw the flames when I started my charcoal.... I was standing in the alley watching my coals when the HFD pulled up and asked about a fire... then they went across the street to talk to the idiots who called it in.

 

OK ... where am I going?.. and WHY am I in this handbasket??

The worst mistake I made with my career was to not spend enough time with my children. Being an aspiring chef and working your way up the ladder requires long hours and dedication ...it is not for a young new mom ( which I was) If there is one thing I could have done differently it would definatley been that. The kitchen for me is an addiction ...maybe too much so.

Don't be so hard on yourself, Gypsy.  You did what you had to do to get to where you are today.

It's true, Gypsy.. we all make different choices in our lives.  I have some very materialistic siblings in law that just make me crazy sometimes and sadly the grown up nieces and nephews (with the exception of two) are just like their parents.  They're into their new trucks, quads, toys.. you name it and can't get their heads around the fact that I gave up a full time income seventeen years ago to become a stay at home mom, and now I'm just able to focus on my career again.  It's a different career from what I was educated for but I'm loving every minute of it and I'm happy.

Like this tread,

Worst mistake was setting a stove on fire by leaving a rag by the pilot. Burned out all the knobs but it didnt burn down the place. The worst part was, the ANSUL got set off when the stove got moved water everywere, and alot of food ruined. Now that I think about it it was kinda a funny, not at the time tho.
