I think the owner needs to spend less time defending this alleged head chef's actions and spend some time looking for a new chef.

Forget kissing them, live frogs should not be in kitchen . At least here in Florida the health department wont permit it.  Only thing alive permitted in most kitchens are crab and Lobster to my knowlege.
