Does anyone have a recipe for custard pie? I just tried the one in King Arthur's All-Purpose Cookbook. It tastes good, but by the time the custard set, the crust had gotten a bit dark. The recipe calls for baking the pie at 425 for 10 mins; then turning off the oven and leaving the pie in the oven for another five minutes. The pie is supposed to be almost set by then, but mine was hardly set at all. It took about another 20 mins for the filling to set, and in that time the crust got a bit dark for my taste. Any ideas for tweaking this one? Does anyone have a different recipe for custard pie?
