Veal Veal Veal

So I love veal! I buy whole calves for an awesome and I mean awesome local farmer. I absolutely love all cuts(even ofals) of the animal but I am curious to hear what you other chefs favorite veal dishes are. My recent favorite is the loin chop or porter house cut seasoned with sea salt and pepper then brought up to room temp then grilled topped with my caramelized  sweatbread butter, mushroom duxelles, and homemade veal demi served over foie gras risotto with applewood smoked bacon. Please share your favorites with me!

^ that sounds good, i enjoy veal and actually love sweatbreads. had some veal liver last week when chefs family from italy was visiting. we do alot of things with veal at my job. one of my favorite would be the veal parm(even better with some fresh mozz), but a good loin grilled with some salt and pepp is just as good.

Any one ever prepare the heart?

I like to prepare the heart as anticuchos, a Peruvian dish where it is marinated with ancho chile and beer and grilled. I serve it with huacatay aji, a spicy lime mint vinagrette; and with veduras ceviche, a lime marinated mixture of red onions, corn, and orange bell peppers tossed with queso blanco and cilantro

I just got some fantastic olive oil from Croatia! Unbelievable!!!!!!!!!! Tried it with some braised veal breast today and again....... Unbelievable!
