I am new here...Hello to all! I am not a good cook by any stretch of the imagination, which is why I joined. however, I do have an unusual situation this week that makes this even worse...I had a gas leak and had to shut off the gas until I can get it repaired. Until then, we still need to eat and I'm not really in the mood to barbecue all week...so if anyone has some good recipes for the microwave, toaster oven, crock pot, rice cooker, etc. I would greatly appreciate them! I guess this is a great time to do some experimenting and since my new goal is to learn to cook, I'm not going to let this stand in my way! I'm anxious to try "almost" anything...I did find a really nice waffle recipe...I also noticed a recipe for fish in the dishwasher but I think I'd rather build a fire before trying that out - that's why I said "almost"! Thanks and I promise to post my results!
No gas/oven this week...Any ideas? Not too difficult please!

You can actually cook a lot of things in a rice cooker, especially if it's big and has a steam basket. Here's a recipe for some steamed tilapia:
Steamed Tilapia with Rice
Makes 4 servings
Prep time: 30 minutes
Cook time: 25 minutes
1 cup orange juice
1 cup Italian dressing
1/4 cup soy sauce
2 tbsp pesto
1 cup uncooked rice
2 tsp oregano
1/4 cup onion, diced finely
1/4 cup bell pepper, diced finely
4 tilapia filets
Combine juice, dressing, soy sauce, and pesto in large bowl. Marinate tilapia in the mixture for 15-20 minutes. Meanwhile, place rice and oregano into bottom of steamer/rice cooker with 2 cups of water. Place steam basket into steamer, laying the tilapia filets inside basket. Sprinkle the fish with the onion and bell pepper, then turn on steamer. Cook for 20-30 minutes.
I've also discovered you can make Hamburger Helper in a rice cooker, even if it turns out rather mushy and burns easily.
The crock pot also piqued my attention: You can make a lot of stews and soups with that. For a beef stew, you can pour in about three cups beef stock (beef base or boullion diluted in water works great), a cup or two of chopped vegetables (if you're in a rush, you can use canned veggies), and about half a pound of beef tips. Season with sage, oregano, and cumin, then just turn it on to medium-high and leave for four or five hours.
Thanks Christine! The talapia recipe sounds great, I think I will try that tomorrow night! I was planning to look up some stew recipes for the crock pot so you saved me time on that also. I've got to tell you - It's SO funny you mentioned the Hamburger Helper because I tried it tonight in the rice cooker before even reading this because I happened to have a box in the cupboard and you are completely right - it was mushy - I'm not picky but WOW - I really made a mess out of it! Sad to say I got discouraged and we ended up ordering out afterwords, but my dogs finished it up and they are really loving me tonight!
I would use the crock pot. Crock post recipes make enough for leftovers.
I would take a cut up chicken, salt and pepper it and put in crock pot. Throw in some potatoes and/or sweet potatoes, carrots, green beans, or whatever vegetable. Add a dash of cinnamon and a can of chicken broth. Cook on high for an hour, then turn to low. Serve with bread
If you want a quick dish using your crock pot you can cook any fish of your choice.
Cook any vegetables first in a creamy sauce or tomato if you prefer.
For something really simple, I suggest:
Put a tin of tomato soup with cream and herbs in the crockpot.
add thinly sliced potatoes
add peas and sweet corn
finally add fish after 15 minutes.
Cook for another 15 mins.
You can choose any soup you like of course!
I have to concur w/ MaryB. Too often people believe the grilling equals hot dogs, burgers and maybe a steak or two. Do yourself a favor, go get Stephen Raichlin's "the Barbecue Bible." Great intro to flavorful grilling the world over. Will absolutely open up your understanding of spices, and certainly your inventory. Sates are particularly easy, and tasty. Though the family favorite is grilled Pizza.
Another thought Try spaghetti and meatballs. Use your grill as an oven by closing the lid and only lighting one side (if that's an option) and closing the lid. If you have a charcoal grill you can get the same results (IMO better) by pushing all coals to one side, putting food on the other and closing the lid. Cook the meatballs in the grill. Simmer some sauce in the crockpot, you can easily cook the spaghetti in the microwave. Good Luck-
P.S. Really, fish in a dishwasher?!?! How is that better or easier than grilling it?
Microwaves - really easy for cooking veg like potatoes, carrots, pumpkins, peas, beans etc. Make sure to cut to even sizes (as with potato and pumkin etc) add couple tbsp water, cover loosely with plastic wrap, and cook until soft enough for your taste. Make extra veg so you can store in fridge for the following day.
Cheat a bit and buy a packaged white sauce - these are really easy in the m/v. Add some parsley and/or grated cheese for variety.
And those reaady made pasta qith sauce dishes? Add some pretty finely cubed chicked or small prawns/shrimp when the pasta is half cooked, may neeed to add a couple of minutes to packet directions. Check the protein is cooked thoroughly before serving.
Utilise hot water from your kettle - lots of oriental noodles e.g. glass noodles require only a soak in hot water, then add a packet of microwaved mixed asian veg, maybe some tinned fish of choice. Say tuna or salmon. Or you could go crazy and try quinoa - again, it only needs hot water and some spices, cover it in plastic, follow timing per packet, uncover, fluff it up with a fork and serve.
The slow cooker is also great for a one pot wonder. Prepare it the night before, bung it in the fridge, then put it on slow (follow cooker directions) for a great tasting meal that night.
BTW if you don't have a lid on your bbq, an upturned roasting dish can be of use as a substitute. While it won't do quite the same job, I've used one, and it comes pretty close.
