I am having a hard time finding a made from scratch or homemade cupcake recipe that is moist and doesnt bake hard on top in a convection oven. We have found a few good recipes that taste really good and are moist but are "crunchy" on top. Any suggestions? We are lowering the temperature from the original temp in recipe.

3/4 cup Vegetable Oil
3/4 cup Milk
Whisk together until sugar has dissolved
225g Plain Flour
2 tsp Baking Powder
Sift together and gently fold through wet mix.
Flavour anyway you want, my favourite is to add 300g of frozen blueberries.
Bake at 180 degrees Celsius(360 degrees Fahrenheit) and makes around 10 muffins.
