The FOH job is to seat and serve the customers. It is not their job to take abuse from customers because of problems in the BOH. The server is responsible for placing the order, serving the food and beverage and otherwise serving the customers at the table. If the server has put in the order correctly and in a reasonable time, the server should not have to "cover" for the BOH not having their kitchen in order. It's not a one-way street, in any way, shape, or form. The servers are "brokers" between the customer and kitchen. The diner is the server's customer and the server is the BOH's customer. They may be your internal customers, but they are your customers. When you don't allow them to serve their customers properly, then it's your fault and you should take ownership of that. This isn't to say that tempers don't flare, especially when the BOH is busting their humps trying to take care of everyone, but in the end, if the BOH is the choke point, then the BOH is the problem. The FOH needs to "accept the things they can't change" or, God forbid, slap on an apron and help. However, that still doesn't make it their job to accept abuse from customers when they have no control over the resolution to the problem.
