I'm a chef/owner of an upscale, wine centered bistro in Texas. I am in the SF Bay Area for several weeks, and would like to do a couple of short stages. Am already scheduled to do three days at Chez Panisse. Am not current on SFBA chefs that are worth staging for and would like your opinion of the best to approach? Thanks for any direction.
