I am interested gaining some input on the pluses and minuses of the above mentioned knives.
I enjoy carbon knives especially Nogents and Masasmotos
I am fine with the "extra maintenance"
I do my own sharpening
I am a lefty
I rarely "need" a slicer but would like to add one due to my growing interest in cutting my own sushi
So - price and other factors considered please comment at will.
