What is the difference between getting the red seal by apprenticeship and by challenging it?

I have already finished my school and have about 5000 hours of worked hours from my employers.

And is there any "other" requirement for challenging the red seal exam in alberta other than proof of schooling and hours?

There is no difference.

You end up with the same pc of wallet sized plastic as the rest of us...

 

Yopu have your blue book, fille dout, signed and good to go? Then go for it.

 

But, be warned... there are some Chefs in this province that sneer at the Red Seal, especially if you've only recently gotten it. It's an ego thing... one of our local "names" comes to mind instantly... "Red Seal.. bah.. I'LL teach you how to cook"
