Broke as a joke this week, and trying to compose a grocery list with a budget lower than i care to admit. Soup will obviously get me far, and I already have most of the ingredients for my favorite one, accept the basil for some pesto, and i'm out of olive oil. I have plenty of other herbs, garlic and lots of butter... suggestions?

You could make what the french call "beurre manier" (kneaded butter litterally) and use it to give a bit of a spin to a velouté soupe, I've posted 15 different types of butters here a few weeks ago, it might give you some inspiration.
Otherwise I've tried some varients on pesto using other herbs such as curry plants to go with a cucumber dish. You can also infuse warm melted butter with herbs. I did it with mint to make mint chocolate brownies and it worked really well.
Quenelles (which are a special type of dumpling from Lyon) are cheap to make too they are traditionally made with pike flesh but can be made with chicken or unflavoured. The recipe is here.
Wish I was broke for a joke . Want to employ a cook .
Thanks pcieluck, that's a massive encouragement, it's been hours of (so far) unrewarding work so just trying to keep pushing at it, I cook most days so now I have a bit more motivation to "make it look amuzing" as my uncle used to say. Did a nice bacon and cherry tomato quiche yesterday, if the photos turn out nice they'll be going up next :-)
Thanks again, glad you enjoy it.
