plated desserts

hi everyone, for my baking practical finals i need to make a plated dessert but i'm not sure what to do can someone help me? I was thinking to do maybe a chocolate cake with a ganache or something.............any suggestions

Best thing to make is items and techniques you've learned, put your slant on them, but nothing too wild.  The emphasis on this one is technique, how you move in the kitchen, and lastly presentation.

Make single serving size gateau St Honore. It's the classic show me what you can do dessert.

A round docked base of pate feuilletee, pipe a circle of pate a choux on the edge of the base with a round tip. Bake that base off.

When cool, fill with creme chiboust. Decorate top with piped creme chantilly, and top with a little cream puff dipped in caramelized sugar.

 

Or you can do a little mousse type cake. Use a round mold/biscuit cutter. Put a little layer of sponge cake on the bottem, and then a strip of ribbon sponge around the edge. Fill with a mousse or bavarois. Glaze with an appropriate flavor on top. Decorate with appropriate garnishes.

smile.gif I just watched an old episode of Julia Child where she made Gateau St Honore. That would be a good dessert, easy to add your own special touches to.
