Hello Steven,

How accurate would you estimate this test to be ? I have many friends that do this.

Thank you,

Petals.

Petals, I have referenced the Mississippi test in nearly all my books, and like it as a quick gauge of heat. To the folks who might not be familiar with the term...here goes: Hold your hand 3 to 4 inches above the grill grate and start counting, "One Mississippi, two Mississippi, and so on. A hot fire will be one or two counts before you have to snatch your hand away from the heat. Four counts would be a medium fire. A cool fire might be 9 or 10. And remember, you can set your charcoal grill up with all three zones by raking the coals into a graduated slope.

Great question, Petals!
