Wood Combinations

What are your preferred wood combinations and approximately what proportions for smoking the following meat?  (For example, I've always preferred mesquite with beef, but wondered if mixing some apple would enhance the flavor...but how much apple?)   Just wanting your thoughts on the subject.

I confess I'm not much of a mixologist when it comes to smoking woods, Tallman. The wood I use has to be shipped to me in Miami, and I don't have much space to store it. I think mesquite is an interesting flavor, but it can easily overpower the food. Your idea of mixing it with a fruitwood such as apple is a good one. If you intend to experiment, it might be easier to develop proportions for smoking chips or chunks, then just extrapolate when using larger pieces of wood.
