Hey this is my 1st post.
ive been reading articles from this site for awhile now and i love seeing the knowlegde that comes out of this place. I also like how you can as a chef relate to everything that is talked about its great.
I have a question for the more expericed chefs out there.
Have you ever as a sou chef done the work of a head chef? I understand that as a sou chef you need to be able to do the head chefs job when he is not there. but have you as a sou chef ever written, costed and ran a new menu with almost zero help from the head chef?
(for the head chefs out there) Is this normal for a head chef to not have involment in "his" kitchens menu?
To the point of not learning it and not putting in as much effort and care into what should be viewed as his menu?
Is he a fake?
