GBC - Chef Training

I'm a culinary student and planned to attend GBC this fall and i absolutely have no experience (well I have 6 month experience working at Milestone Bar & Grill). After reading couple of forum, is it true is going to be well stressful inside and outside the course, and is it also true you have to perform julienne cut at the FIRST of ur chef training? if it is true, i gotta practice before class starts.

You might as well practice in any case. Make it less stressful for yourself.

You'd be surprised how basic it is at first.  You've got nothing to worry about, but I would at least practice at home if only to help you feel comfortable around knives.
