Turkey Bacon-Wrapped Chicken Breast

Thread Starter

I threw this together last night based on what I had. It tasted great and was much lighter than expected.

1 lb Chicken breast
12 Strips of Turkey Bacon
1 Onion
1 Green bell pepper
1 cup Italian dressing (of your choice)
1/4 cup Honey
1 tsp Garlic powder
1 tbsp Cumin
1 tbsp Onion powder
1 tbsp Celery salt
1/8 cup Olive oil
Black pepper to taste

-Cut your chicken into 12 cubes/strips (1" x 1/2" x 2")
-Marinade the chicken in the italian dressing, honey, and garlic powder for a solid 8 hours
-Cut the green bell pepper and onion into 1/2" x 2" strips.
-Place 1 chicken piece, 1 green pepper piece, and one onion piece on a strip of bacon and roll up. Use a toothpick to hold it together
-Brush on some olive oil (this will help keep the roll moist during cooking)
-Sprinkle the cumin, onion powder, and celery salt on the roll
-Place on grill over indirect heat. Cook for (about) 8 minutes and then turn over and cook for additional 5-8 minutes until done
-OPTIONAL: add your favorite barbecue sauce after turning rolls.
-Remove from grill and sprinkle some fresh black pepper

Just curious--what's your favorite barbecue sauce?

That looks phenomenal Deepfryerdan!

I like the marinade of Italian dressing, it seems to me that people shied away from that recently, I dig it.

So many people out there poopoo using vinegar in any way to marinade proteins.

And it doesn’t look like the Turkey Bacon dried up at all!!

Love the BBQ sauce at the end.  We're goin' have to try this one!!

Funny enough, I just finished writing a blog post about trying 5 different barbecue sauces. It's going to post on Thursday at about mid-day. So check http://deepfryerdan.wordpress.com on Thursday afternoon to find out!

I have a very picky-eater wife and italian dressing is one of the few things she enjoys. I don't mind it at all and it is a good marinade so it's our go-to when nothing else sounds good. Thanks for the compliments!
