I am aiming to graduate from Le Cordon Bleu of Scottsdale in June of 2012. My goal is to get over to Spain or Italy to cook for some time to get more experience under my belt. I know the first step is to get a work Visa for either country (which from what I have read is a headache). After that, does anyone have advice on how to find a restaurant or chef to work for? I have lived in Spain since 1986 and I was four at the time, so I don't have connections. I have time to plan this out and want to be sure I don't waste time, money or energy going through this.
