White chocolate whipped cream problem.HELP!

Hi,

im having trouble making white chocolate whipped cream, a recipe from Dorie Greenspan's book "Baking from my kitchen to yours".

the recipe is, 6 ounces white chocolate, 1 1/2 cup heavy cream. i did what she said, melt chocolate with 1/2 cream,cool it, whip the rest 1 cup of cream till soft peaks, turn the machine to high and add the chocolate all at once and continue whisking till firm peaks. i tried it twice and both times the whipped soft peak cream dies down when i add the chocolate and when i try to whisk more to reach the firm peak phase it curdles!

i saw a youtube video and tried their way of making it by melting the chocolate with the 1 1/2 cup cream, cool it, and then whisk but it didnt rise!

 

can someone please help?!

I have had that happen before.  I have the best luck letting the chocolate cool to room temp, then mixing it right in with the cream, whipping it all together, but only to soft peak - no further.  Once it chills it will firm up and be completely stable.
