Im looking to get sum suggestions on a recipe I have not yet experiemented with yet but will in the near future. So my my idea is a hazelnut crusted skate, along with the skate there will be a sauce that consists of seared grapes and rose champagne reduction sauce along with a combination of sauteed chantrelles, beech mushrooms, and bluefoots. Im just looking for sum suggestions on whether or not this is an ideal combination and also looking to hear your suggestions for alterations.
