Thanks for the welcome! Yes, I have been reading the forum and articles for about a month now and I really like the site.
I would not consider myself as a professional chef, I have worked on the food industry for awhile and I had my own small restaurant before, I was the main cook or chef and I had several cooks to help me; but I have never been an executive chef or something like that and I do not have professional training. I have done some professional catering, serving on very important events, but that is it. So no, I am not going to post on the professional chefs, I am just going to learn from the big ones :)
I have cooked for myself back since I was in college, and now I cook for my family and in about a month I will open a restaurant. My first job on the food industry was at Domino's Pizza, and then I had others mostly italian food. I can say gratefully that my pizza and pastas are the best in town (according to people's poll and demand) and a couple of years ago I started doing cakes for my daughter and everyone just loved them so something clicked inside of my head and I started to do some more complex dishes with success and that's when I decided to start learning more and more and do this for a living. I am planning to get a degree on gastronomy and being in Mexico I have a great advantage since Mexico is very rich in gastronomy, almost each state has its own gastronomy, too bad here where I live there are no culinary schools, but something will come up.
So hopefully I can contribute with my knowledge and also learn from others.
