you know @Concetta myself I am not Italian, so I have now base to go by on canning peppers the way that my DH's nonni did hers.  I've tried this twice now and I think that I'll just stick to roasting the peppers and eating them straight away.  As for any extras that I have, I cut them into strips and freeze them for the winter when I can't get them and then just cook with them
