Nicko's got some good suggestions in keeping with the cuisine.

Some Garlic Cholula or Lime Cholula would be my gut response, but they're not dipping sauces.

Sour Cream or plain yogurt kicked up with Sriracha is a pretty versatile and tasty dip and I can see that working well too. Plus it's stupid easy.

I like to use a Cuban influenced Mojo Sauce, a mix of toasted, ground cumin, olive oil, fresh orange juice and fresh lime juice.
