worked a batch of marmalade today and it would not set up. The recipe was followed as well as procedure, when i brought the problem up we added.75oz of extra pectin. Yet it did not fix it, does anyone have some insight to this situation?
recipe
4 cup OJ
7 cups sugar
supremes of 7 oranges
zest of 7 oranges triple blanched and battoned
3oz of pectin
The oranges we got in were not the ripes 3 or so stil had a little green near the branch end.
