Chunky White Chocolate Chip Cookies
14 oz White Chocolate
12 oz Macadamia nuts
8 oz butter
8 oz brown sugar
6 oz granulated white sugar
1 tsp salt
1/4 c honey
2 tsp vanilla extract
1 pound 2oz bread flour
1-1/2 tsp. baking soda
1: Preheat oven to 350˚
2: Chop white chocolate and nuts into raisin-sized pieces.
3: Cream the butter with the sugar, brown sugar, and salt. Stir in eggs one at a time. Stir in vanilla and honey.
4: Sift together flour and baking soda and stir into butter mixture until just combined.
5: Stir in nuts and chocolate
6: chill dough until firm. Scoop with large scoop onto parchment paper-lined cookie sheet. Bake until they just begin to pick up color.
Store them in an airtight container to keep them crisp, or keep a piece of bread in the container to absorb excess moisture.
