I'm not a catering chef, but we're from a 'tropical' place, and we were married on Oahu. Our wedding reception was an outdoor buffet; we had 2 different pokes as the starter. A signature cocktail is the way to go these days, like maybe a hurricane or an old fashion Mai Tai. As for the main event, how about teri chicken, a beef dish (we had broccoli, my husband's favorite), a vegetarian dish (we had a tofu stir fry), noodles for good luck and long life, fried rice, and assorted salads and veggies. The cake was 'death by chocolate', a dense cake with a raspberry filling and a rich ganache icing. We had 90 people, so it was a 2 layered, heart shaped cake with fresh flowers to garnish. The food was good, the company fantastic, and the best part, everyone had an outstanding time.
