I have been asked to make the cake and food for a wedding 12-17-2011 for about 60 people. Any suggestions?
'Tropical' themed wedding buffet suggestions?
I'm not a catering chef, but we're from a 'tropical' place, and we were married on Oahu. Our wedding reception was an outdoor buffet; we had 2 different pokes as the starter. A signature cocktail is the way to go these days, like maybe a hurricane or an old fashion Mai Tai. As for the main event, how about teri chicken, a beef dish (we had broccoli, my husband's favorite), a vegetarian dish (we had a tofu stir fry), noodles for good luck and long life, fried rice, and assorted salads and veggies. The cake was 'death by chocolate', a dense cake with a raspberry filling and a rich ganache icing. We had 90 people, so it was a 2 layered, heart shaped cake with fresh flowers to garnish. The food was good, the company fantastic, and the best part, everyone had an outstanding time.

Thanks for the input. The bride says (now) she really doesn't care. Her only dislikes are hard cooked eggs. She doesn't even like cake. I'm doing this more to help my friend (her mom) get through this with less stress.
mmmmK. A new update as of today...the wedding is set for 11am so this has just become a lunch buffet for 70. The bride wants a chicken item and a beef item, appetizers, salad, and a $1K budget including the cake. Anyone have any ideas or suggestions?
