It depends more on which part of the pig the chops were cut from and how long you're cooking them.
The shape of the slow cooker is much less important and IMHO, is more about the size and shape of what you like to cook.
I would choose a tougher thicker cut for this purpose and stack the chops on top of some other things like sliced onions, waxy potatoes and so on if I were cooking for 8 hours or so.
If you're using chops from the loin, those will overcook easier and be tough and dry. Basically need to be cooked for less time.
