Day after culinary school graduation find out im gluten intolerant , feel so lost..

Yep title says it all. Story of my life ended up in the ER finally 3 days after graduation with breathing problems, sores in my mouth on my fingers , dizziness etc (students gave me a "flour salute" in the parking lot throwing it all over me).  Does anyone know of any culinary schools that specialize in teaching gluten free/ allergy cooking? I had plans to go on and be a pastry chef and further my education but I can't work in a standard kitchen setting now (even a regular kitchen with the pasta and such). We don't have any gluten free bakeries where I am and I'm just out of school not ready to start my own. I feel like I've just wasted my life on a degree I wanted so badly.

I am so sorry your plans have been changed so drastically.  But I do see more and more requests for gluten-free items and there are some bakeries here in my area that specialize in these.

If you spend some time researching, you will find some good gluten-free discussion groups online and businesses that specialize in cooking this way.  As long as you are willing to relocate, you could start contacting companies in your part of the country.  

Education and life experiences are never a waste, you just have to take them in a new direction now.

Hi! Sorry to hear about your new discovery of being gluten allergic. Don't give up. Gluten Free cooking is a huge trend now since there are so many people gluten allergies. My advise is to google gluten free products to find companies who specialize in this. As Jelly said, you may need to relocate. Have you spoken with the bakeries in your area? Who knows maybe they will be interested in expanding their product line and perhaps they can set aside an area for you to work in. Stay positive! With time more and more bakeries and restaurants are coming around to realize the importance of having gluten free products. Turn your "problem" into a "solution" to help other like you! There are hundreds and thousands of people like you.

I feel your pain. At least you have an early diagnosis, it took me over 15 years to get one. Try www.celiac.com someone there might be able to help you out.
