DOMECQ FAMILY ANDALUSIAN GAZPACHO

8 Servings ...

 

3 pounds ripe tomatoes coarsely chopped

3 cups mineral water

1 1/2 large cucumbers peeled and coarsely chopped

1 1/2 large onions peeled and coarsely chopped

1 1/2 red bell peppers coarsely chopped

6 ounces Baguette torn into bite size pieces

3/4 cups dry white wine ( Spanish preferably )

6 tablespoons tomato paste

3 tblsps. red Sherry wine vinegar

3 garlic cloves minced

1 green bell pepper

 

1) puree first ten ingredients in blender in batches.

2) strain the cold soup through a sieve, pressing on the solids with the back of a spoon. Season with Salt and Black Pepper. Cover and chill until cold.

3) Ladle the cold soup into Martini Goblets and sprinkle with Jabugo Iberian Acorn Fed Ham and Celery ...
