Here is a very delightful Italian and Mediterranean spread for canapés and it is so relatively simple ... One can use olives that are sold without pits if you wish to.
250g black olives ( I use Kalamata or Nicoise varieties )
3 anchovies in olive oil from Canatabria, Spain
1 clove of garlic minced
2 tblsps pine nuts
100ml extra virgin olive oil preferably from Catalonia or La Rioja as they are much lighter
black pepper freshly grinded
bread toasts of choice and type ( I use Chapata or Baguette style )
Lemon juice of 1/2 lemon
Blend the above ingredients and spread on bread or cracker toasts ... Serve with a Cava.
*** Note, one can also prepare a Hummus and Babaghanoush ( Mutabal in North African countries ) with Pita toasts ... Lovely too ...
