Pearls before.......

On my last semi-annual trip to Amish country I picked up a bag of tapioca pearls. Had it in the back of my mind that there were several recipes in the file that called for it.

 

Surprise! Can't find a one.

 

So, what do y'all do with this stuff?

I've always had a soft spot for it as pudding. What Dennis the Menace called Fish Eyes and Glue.  Grind it up, it makes a good fruit pie thickener Or use as pearls for thickening berrie pies where the pearls imitate berry blob texture a bit.

Thai Tapioca Pudding

2/3 c tapioca pearls, warm water

2 c water

3/4 c sugar

pinch salt

1 c coconut milk

+ optional (presentation):

9oz tropical fruits

lime zest

shaved fresh coconut)

 

1. Cover tapioca with warm water, soak for 1 hr. Drain. 

2. Boil 2 c water. Add sugar & salt, dissolve.

3. Add tapioca and coconut milk, simmer for 10mn, until the tapioca becomes transparent. 

4. Serve warm, in a bowl, decorate with tropical fruits, lime zest and coconut shavings.

French Fries, my wife loves tapioca pudding so she is going to this recipe.  Thanks!!!  KYH, my grandmother used to use tapioca like Phatch said, in her berry pies to thicken them.
