Get used to work with cockroaches?

Have you get used to work with cockroaches?

It's called a clean kitchen (including storage areas) and an exterminator service.  

 

Try it.

 

 

Depending on your location, it may not eliminate them completely, but their numbers will at least be greatly reduced.

In both of my restaurants I NEVER had roaches!!!  COMPLETELY UNACCEPTABLE, PERIOD.  Get an exterminator, some traps and start to clean under the stoves/line.

I agree, that in an ideal world cockroaches in the kitchen are unacceptable, but the truth of the matter is, for anyone having worked in a restaurant in nyc, often below street level, 100% cockroach free is often just not realistic.

You're still responsible for doing everything that you can to eliminate and prevent them (clean everywhere and maintain that cleanliness, close up holes in the walls, get a proper exterminator, etc), but I've seen spotless restaurants in NYC that still had a roach or two make an appearance scurrying across the floor.

This is why in some areas of NY it is illegal to build a kitchen below street level in new construction., But you are right there are plenty of roaches  there no matter what you do .Then there are the famous NY Sewer Rats to go along with them.

My friend in Texas said that his kitchen gets an occasional roach now and then.  They keep the kitchen clean, so it is a rare occurrence.  The last time they saw one, the executive chef (who was on his first or second week of work there) grabbed an arisol can and flamed the little bugger to death...he then spent the next 10 min or so running around the kitchen searching for more to kill.  They still laugh about it months later.

the question is how much do you care about your customers. I promise you that if a customer found a roach in their foood you would eventually go out of business. It's a costly matter.  If they are hanging out, something is not clean. Start looking under equiptment. Is there any pools of grease or water.  I would rather deal with mice instead of roaches with all the diseases they carry. Give me the name of your restaurant so I can look it up on the health department page and the other violations. Maybe invest in a door blower once you get rid of them. Make sure all your doors have blocking strips, and make sure all doors are closed.  Watch out for that smiker that likes to prop the open because they don't want to be locked out.

If you see one roach, there are probably at least another 100 waiting for the lights to go out.

If they don't pay the rent they have  to get out !

 

Empty the kitchen, move the equipment.....stay all night and clean, call an exterminator, do what you have to do .

you dont get used to it... you do everything in your power to nip the problem in the butt.... even if you can't get rid of them, you dont stop trying... cause once the customer sees that your kitchens reputation goes to squat. word of mouth is harsh.

i got them in my apartment, going to embomb the place next wednesday....i have to get rid of my cardboard boxes, and put everything in bags.....what a pain, but i am going to try to get rid of the things....i agree with above thread, , turn off the lights,, come back in an hours, and they are everywhere...
