Thanksgiving ice cream recipe idea

I am tasked with ice cream for Thanksgiving, & thought orange/cranberry would be fitting.  Thought I'd run my ideas by the hive-mind for vetting:

 

Infuse brandy with peeled zest of one orange, then use that to macerate dried cranberries.

 

Reduce the juice of 3 oranges over low heat by 2/3 (~12 oz - 4 oz, I'm guessing).

 

Make a standard custard style vanilla ice cream base.  Add grated zest of two oranges to the hot base, strain the base again once cool, add the reduced OJ & infused brandy, chill overnight in the fridge.  Add the macerated cranberries at the end.  Possibly use this to make profiteroles.

 

If anyone sees any holes in my thinking or has a suggestion for a better ways to do this, I'd be glad to hear it.

You don't need to infuse the brandy.  Unless you want the orange peel, the concentrated OJ will do the job.  Better yet, use Grand Marnier or Curacao instead of brandy and cut down slightly on the juice.

 

Save yourself some time, use defrosted frozen orange juice.  They concentrated it for you.... cheaper too.

 

Do you really want cranberry ice cream with pumpkin pie?  To each his own of course, but not me.  I'd avoid the fruit and go with something simpler, spicier, and more complimentary to other holiday desserts; things like "five spice," all-spice/ginger, or cinnamon/nutmeg/clove -- all on a French vanilla base, and all with a splash of good rum or cognac.

True, true, but iacta alea est.  We'll see how it turns out.  That was the idea behind the orange peel in the brandy - make a little jack-leg Grand Marnier.  I have brandy; I don't have Grand Marnier.

 

The orange/cranberry ice cream will be in profiteroles.  And we're not doing a traditional Thanksgiving dinner, so it won't be duplicative of stuff we already had at dinner.  I actually decided to try this in order to sneak a little traditional Thanksgiving in to the meal.

 

And I am making straight vanilla as well, for pie.
