does anyone have a recipe for those glazed fruit tarts (round or rectangular) I see in good bakery shops and bakery departments like Whole Foods? Have been trying to find one online and have come up empty?
There are several versions in the CIA's Baking At Home. Using the tart dough recipe in that book, and either their recipes or adapted ones, I make them in mini-tart pans and they equal anything sold at those places.
In most cases the glaze is merely an appropriate jam or jelly. Warm the jam/jelly over low heat until melted, then brush it over the warm tart.
