help seeding and chopping dates

No, I can't find chopped dates anywhere.  I have to do my own.  I'm making three fruitcakes (UK Cristmas cakes) for christmas and there are a LOT of dates to cut up.  I hate it.  The knife sticks, the dates stick.  Dipping in hot water - yeah, but every half a minute.  Is there a trick?  (get an assistant?) 

I have little hope but maybe someone has some idea.  (flouring them? squashing them?)

Sprinkle knife with icing sugar before cutting the dates.  Not too much or it turns to gunge on the knife.

I snip them with scissors!
