Thai Cuisine Help!!

Im going off to culinary school next fall and at the moment Im working at a Thai restaurant.
Love my job .
The problem is,tho the food is "good" ,the menu is just too safe.Safe to the point that nothing really stands out in the menu visually or taste wise.To me,the food is rather bland even with
all the great curry and spicy/sweet flavors Thai cuisine offers.
Any tips or advice to help improve the flavors ?

Techniques/ingredients on preparing appetizers ,chicken,duck,salmon and beef in a flavorful and presrntable way would be greatly appreciated smile.gif

I would talk to the owner/chef before making such suggestions about what they've tried in the past and how it was received by the clientele. It may well be that the people in your area don't want foreign food that's too foreign.
