I was speaking with a professional Italian chef about his pasta sauce and how great it was. I asked if he would share his families secret. He said the secret was in the onions that they were a 6 in 1 onion. These onions were than put through a meat grinder. A meat grinder I have but I can not locate the real name of the 6 in 1 onion. I bet he meant cippolini though I'm not positive of that. Nor the spelling. It might be cippoline or something similar.
I've never heard of 6 in 1 onions myself.
Phil: While cippolini are wonderful onions, they are seasonal. And, being sweet, they're not good keeprs. So I wonder if a professional chef would be using them in his basic pasta sauce
