Goose Fat

I just received some goose fat as a gift from a friend who cooked goose for Christmas.  I'm planning on sauteeing some potatoes in it.  What else can I do with it?  I'm very excited, never had goose.

You can use it for anything you'd use duck or chicken fat, KK. Those potatoes should come out spectacularly, for instance. Or try melting some onto green beans. If you've got enough of it, try confitting with it as well.

 

Goose fat is a low melt, low smoke point oil, however. So I wouldn't think of it for deep frying.
